Apple tarts

It’s Friday – yeah – so ending the week with a treaty recipe that I think will work for many fussy eaters.

These were delicious! They can also be modified to tick boxes.

1. At the front is one with lightly cooked, diced apple

2. In the middle, same, but with a dollop of cream (or yoghurt/cream cheese/coconut cream)

3. At the back, a tart shell with uncooked, sliced apple.

Picking what will work best for our child helps support them to be able to manage and accept new foods. Even though we may prefer it if they eat the cooked version, starting with uncooked may be easier.

Recipe

I made the pastry, but you can, of course, buy it (although it’s fun and easy to make with children).

Pastry
½ cup flour
1 tsp baking powder
1/6 cup softened butter
1/6 cup sugar (I used coconut sugar)
Rub together or mix in the food processor
1 tbs milk or water (more may be needed)
Mix together to form a soft but not sticky dough.
Roll out on a floured surface.
Cut into circles
Place pastry circles in greased muffin tin holes (I made small ones that covered only part of the space)
Bake at 175˚ for approx. 15 minutes until browning and crispy

Filling
Either uncooked apples sliced or:
Slice or dice an apple and cook in a little butter on a low-medium heat
Add water, if necessary to prevent sticking. I cooked in some apple juice for sweetness
Add sweetener or not to taste
Add a pinch of cinnamon if you wish

Fill tart shells with apple mixture
Add cream/yoghurt/cream cheese or coconut cream if you wish
