Berry breakfast

This is my take on overnight oats with a twist. It’s sort of a cross between overnight oats and a smoothie.

I have added a little nutrient boost or two in there as well.

The recipe is flexible so you can omit, add or swap ingredients so it ticks boxes for your child.

Recipe

1 cup milk
½ cup oats (I used wholegrain but blitzed them up)
½ cup berries (could use any frozen fruit)
¼ cup cream (I use cream in place of sugar. It’s also additional calories for those that need it)
1 dst spoon chia seeds (optional but a good source of omega 3)
Optional – a banana for sweetness but works without too

Method

Blitz the oats to chop them finely.
Add the milk andchia seeds and soak (doesn’t need to be overnight but several hours softens both)
Soften the berries and then blitz everything together in a food processor or blender.
Serve immediately or can be kept for a few days.
Could also serve warm or with honey drizzled over the top as a dessert.
