
Weetbix cake
I was looking for a Weetbix slice, so where else to go but the Sanitarium Weetbix page. I dutifully made the recipe and it was dry, crumbly and not very nice.
Hmmm, what to do. I needed to make the base more moist so decided to add an egg. That really improved the mixture but I felt it was a bit flavourless so added some vanilla.
The end result was a big improvement on the original but more ‘cake’ than slice. It wasn’t dry but it’s not ‘moist’ either so really needs the icing.
With the icing it’s quite nice, but I’m not raving.
What should I do to fix it? I’m quite an intuitive savoury cook but when it comes to sweet things I’m not fab (as my boys will be happy to tell you!).

Recipe
Base
2 ½ Weetbix crumbled
½ cup flour (I used whole meal)
2 dst sp ground linseeds (for extra nutrients – optional)
Pinch salt
75g melted butter
3 hpd tsp honey (made need more, according to taste)
1/6 cup peanut butter
2 tsp vanilla
2 small eggs
I put everything in the food processor and whizzed.
Press into a greased baking tray/dish
Bake at 180˚ for approx 20 mins (starts to brown on top)
Peanut butter icing
1/4 cup peanut butter
1 tbs butter
1 tsp honey
Boiling water (approx 1 tbs)
It looks lumpy and split, keep stirring and it will form a paste. Add more water, should it need it.
Spread icing on the cooled cake
