Weetbix chocolate pudding

I have whipped up a few Weetbix recipes recently. It’s not something we normally have in the house and I was frustrated by all the wasted crumbles at the bottom of the box!

As I know many fussy eaters like Weetbix I love finding new recipes as it’s a great way to encourage them to accept something new.

The other day I made a home-made Up & Go using Weetbix. I wanted to see if I could get away with adding an egg – for additional nutrients and also for the many ‘non-egg’ eaters.

I couldn’t, it just didn’t work in the Up & Go. But, with a few tweaks it made a great chocolate pudding. Perfect for a snack, a dessert or even breakfast!

Recipe

½ cup crushed Weetbix
½ cup milk (can add extra if you prefer runnier)
½ cup cream (great for children who need additional calories)
2 hpd tsp melted honey/maple syrup (if you prefer sweeter, may need additional)
3 hpd tsp cocoa powder
1 egg
1/8 cup melted butter
Pinch salt

– I mixed everything together in a bowl then cooked in the microwave to soften the Weetbix and cook the egg (I heated a little, stirred, heated some more, stirred – it stops the egg scrambling!)
– Blitz in the food processor until smooth
– Eat hot or cold
