Cucumber roll-ups

The small, budget version for picky eaters!

I used a potato peeler to remove the dark green skin. Then scraped rolls of cucumber flesh to fill with peanut butter, cream cheese, baked beans, mash, or cheese … insert a favourite food here!

Something that looks cool is always worth a whirl, as is encouraging our child to help out.

These are not the flashiest looking but are super quick and simple.

Plus, the cucumber is quite crunchy when done like this so is more likely to tick boxes for many picky eaters.
