Ice cream – from custard

Earlier in the week we made home-made custard. There was some left over so I decided to turn it into ice cream.

My boys were NOT excited! I explained that the base is the same as a classic ice cream mix with milk, cream, egg, and sweetener. Still not sold!

I added some additional cream to the custard base and did the simple/budget ice cream concept by just placing it in the freezer in a pot and stirring occasionally. It makes it a little icy but does mean no ice cream maker is necessary.

My young teen tried it, was pretty impressed but questioned whether he could add strawberries.

He used frozen ones and whizzed them together in the food processor. The outcome was AMAZING. The boys then fought over who got the most. Sigh. But exciting at the same time. It really was great.
