Mini fried frozen eggs
Did you know you could freeze eggs? No, me neither!
A friend sent me over a video of a chef creating mini fried eggs for his preschooler and I thought what an awesome idea.
It ticks a few of my ‘recipes for fussy eaters’ boxes:
1. It’s unique and quirky and interesting – anything that gets our picky child engaged with food is a plus.
2. The result is mini – small anything is easier to contemplate.
3. They are cute – we are far more likely to eat something appealing.
The result was good, if a little amateur. But I love simple and although presentation is important, perfection is overrated.
Recipe
Freeze a raw egg for 24 hours
Allow to defrost slightly (or the shell is harder than concrete)
Crack and peel shell away
Slice thinly with a sharp knife
Fry in rounds in a lightly greased pan
Serve
