Lamb mince
Beef mince is commonly eaten by fussy eaters and can be a good way to move or bridge to something a little new.
Introducing lamb mince may be a workable next step.
One way may be to mix some in with beef mince so there is a slight flavour change (I always start super small eg. 90% accepted and 10% new).
Cooking the lamb mince in similar ways to beef mince may also be a good way to support a picky eater to take a new step.

In my version of lamb I cooked the mince with onions, celery, garlic, carrot, lentils, tomato paste, stock and red wine!
