Stuffed crepes

It was Shrove Tuesday yesterday – AKA – pancake day. It was a big thing in our house when I was a child. Things obviously haven’t changed much as my mother (now in her 80’s) was whipping some up for herself and my dad!

My boys love them both as a sweet breakfast option but also as part of a savoury meal.

We had ours with steak and cheese sauce but for a fussy eater it may be just some grated cheese, peanut butter or some plain chicken or nuggets.

It makes a fun and kind of ‘treaty’ dinner meal!

Recipe

1 cup flour – I used wholemeal
2 eggs
1 cup milk (or ½ milk, ½ water)
2 tbs melted butter (can omit)
Whisk ingredients together
Fry on a medium/high heat in a greased pan until browning. Flip and brown the other side.
They are great warm but keep well for a few days. I often send in lunchboxes cold!
