Crispy potato skins
There seems to be a theme running through this week’s potato ideas!
These are are great idea for picky eaters as they are super crunchy.
You can have as is or fill with a favourite food like cheese or bacon.
Although they do take a bit of time to cook, the prep is quick and easy.
Recipe
Wash, prick and put a potato or two in the oven
Bake at 170˚ until the inside is soft
Cut in half and scoop out the flesh (I leave a little as it gives the skin structure)
Bake at 190˚ until the skins go crispy.
If you’re adding cheese, return to the oven until melted
(The left-over inside can be used for mash or mixed with cheese/sour cream/butter or whatever and returned to the skin).
