Spring roll fillings for fussy eaters!
I love taking foods and experimenting with fussy eaters in mind.
My boys love home-made spring rolls so I wondered what I could do that would tick boxes for the picky.
I started with one filled with melted cheese. OMG. I had a little taste and found myself scoffing the whole thing – oops! Sort of pastry meets cheese toastie.
I then experimented with:
– Chicken
– Mince (from bolognaise)
They work soooo well!!
They are fabulous from a texture point of view – crunchy without being dry.
The flavour combination is excellent.
They are super simple to make.
They are great fun to do with the children.
Recipe
Spring roll wrappers (purchase from the freezer section in the supermarket)
Defrost the wrappers for 30 mins
Place one on a plate (so it looks like a diamond)
Add grated cheese/mince/chicken or other filling into the bottom section above the point of the diamond
Fold the bottom point up and the then the two sides in
Fold up towards the top of the wrapper to form the roll
Fry on a medium-high heat until browning on all sides
Best eaten straight away but are okay for lunches the next day too!
