Toasted corn
Corn on the cob is a vegetable that is accepted by quite a few fussy eaters. Unfortunately, in NZ fruit and veg are only seasonally available so these disappear for 10 months of the year.
Tinned or frozen corn has more of a ‘wet’ texture and that can make it less appealing for some picky eaters.
Toasted corn though is super simple and is more like corn on the cob in terms of mouth feel.
Recipe
Tinned corn
Dry fry quantity required in a frying pan over a medium/high heat
Stir frequently until corn starts to dry out and brown slightly
If you cook for longer you can get a BBQ-type flavour
