Protein powder cookies

Last week I posted a recipe for home-made protein powder (which you can check out here: https://theconfidenteater.com/blog/funfoodideasforfussyeaters/home-made-protein-powder-fun-recipes-for-fussy-eaters/

One of the mums also requested a protein powder version without oats, which I tested, and I think I prefer. I have put the alternative up on the same post.

I was looking for recipes to make with the protein powder, not because I believe children need more protein, but to help boost calories and nutrients for those fussy eaters who are struggling in that area.

These cookies seem soft on the outside but are quite crunchy. I think the protein powder works well in them.

Recipe

½ cup protein powder (I used the quinoa version)
½ cup flour (I used wholemeal but use almond for GF)
1 tsp baking powder
2 tbs melted butter
2 tsp vanilla
1tbs milk (add more, if needed, dough should be quite wet)
1/3 cup of raisins or choc chips

Method
Heat oven to 180˚
Mix dry ingredients (except raisins/choc chips) well
Add wet ingredients and combine. Mixture should be quite wet so add more milk, if needed.
Add raisins or choc chips.
Form into cookie shapes on a silicon tray or baking paper.
Bake for 12 mins, until browning on top
