Pancake wraps (wrap pancakes)
These are a combination between a pancake and a wrap. Many picky eaters are okay with both, so a mixture could also be a win.
As they are a beige, carb-based food, even if different they may be in the comfort-zone.
The advantage to this wrap is in its simplicity and flexibility. It will roll really easily.
I used these for a quick family dinner, with leftovers for lunches. So quick I forgot to take the photo until we’d sort of served ourselves – eek!
Recipe
1 cup of flour (I used wholemeal)
2 eggs
1 cup milk
Whisk all the ingredients together.
Fry on a medium heat in a greased pan (as the mixture is thick, I smoothed them out with a spatula to spread the batter across the pan – actually, I used my fingers but in a perfect world I wouldn’t have!)
Cook until browning, flip, and fry until browning on the second side
