B-Bread
This is very left of centre but bear with me! It’s bread made from banana. No it’s not ‘banana’ bread, it’s regular bread, but made from banana.
I think this is perfect for many fussy eaters:
– It is super crunchy. More toast texture and crisp than bread.
– It is made from banana, but doesn’t taste very ‘banana-ry’
It contains fruit – yeah!
It’s quick and simple to make.
It’s flexible. I tried a variety of fillings and came up with some slam-dunk winners.
Recipe for B-Bread
1/2 cup pureed banana (approx 1 big banana)
1 cup flour (I used wholemeal) – may need slightly less so reserve some initially
2 tsps baking powder (unless using self-raising flour)
Fillings: I tried:
– Honey – gives it a lovely sweetness
– Honey + cinnamon – nice
– Peanut butter – too dry
– Raisins – run away winner – sweetness, soft inner etc.
I think jam, choc spread or any dried fruit would be a win.
Method
Heat oven to 180˚
Puree the banana and stir through the majority of the flour and baking powder
Knead a little just to bring together into a soft dough (the drier it is the crunchier the end result)
Leave for 20 mins
Roll dough into a large flat rectangle then cut into small pieces.
Add the filling to each piece (or spread it on) and roll into a tube.
Place tubes on a silicon or greased tray.
Bake at 180˚ until browning and cripsy (approx 20 mins)
Eat as is. If not eating all immediately, freeze the remaining portion to keep fresh.
