Boom! Beetroot

Okay, bear with me as I know beetroot probably wouldn’t be your first pick for a fussy eater.

But …
– It’s sweet (sweeter than carrot)
– It’s crunchy
– It’s a funky colour (which may not be a bad thing)
– It’s budget-friendly

And you can cut it into fun shapes if you wish. Diamonds anyone?

There is tinned beetroot, there is raw beetroot, there is roasted beetroot, then there is this one …

Boom! Beetroot recipe

Fresh beetroot – cut into thin shapes
Butter or favourite frying oil
Method
Heat a pan on medium and melt butter
Add the beetroot slices, turning until desired consistency is achieved (I cook for 10 – 15 mins)
Serve warm or cold (the crunch remains if refrigerated)
