Cheese & ham muffin

This is a super quick, simple and delicious recipe.
It’s also flexible so you can cater it to your child’s taste.

Recipe – Cheese & ham muffin

¾ cup of flour (either use self-raising or add 1 ½ tsp baking powder to regular)
¼ tsp salt
1 cup grated cheese (I used tasty)
½ egg
½ cup milk
Add some ham, bacon, spinach – or whatever rocks – all optional
I also added 1/2 tsp garlic powder, ½ tsp thyme, pepper (mustard would work too) – all optional but all add flavour. Many children love flavour even though they like plain pasta!

Method

Heat oven to 210˚
Mix dry ingredients together in a bowl
Mix egg and milk
Add wet ingredients to the dry ingredients and mix gently (don’t over mix)
Fill a greased or silicon muffin tin or patty cases.
Mixture makes 6
Bake for 10-12 minutes
Cool for 5 mins before removing from cases
