Cheesy souffle

Admittedly, these don’t look great, but they are super simple and a massive protein boost.

Texturally, they may not be a win for everyone. If your child enjoys scrambled eggs, for example, then that’s probably the closest way to describe these (although it’s smooth, not ‘chunky’).

They are light, fluffy and moist.

For flavour, think melted cheese, but you can easily add additional boosts (which I tested). One of these is something you are soooo not expecting but rocks!

Recipe – Cheesy souffle

1 egg
2 tbs cottage cheese
½ cup of grated cheese (I used tasty)
S & P
Flavours (optional):
Diced ham – delicious
Vegemite – I know, I know – but it rocked!! I added 1 ½ tsps which gave it a really strong boost so 1 tsp would be more subtle.

Method

Heat oven to 180°
Put the egg, cottage cheese and grated cheese in the blender. Whiz until smooth.
Add ham or Vegemite (optional). If using Vegemite add in blobs and don’t blend in but just whiz to disperse.
Pour mixture into muffin tin or cup cases.
Bake for 20 mins until browning on top.
