Cornflake bars

I love to make recipes that are as nutrient dense as possible and without unnecessary additives.

I also love recipes that are simple, use basic ingredients and that children can make themselves.

Boom, this one ticks those boxes!

I have made it two different ways, but both use only 3 ingredients, there is no cooking, and a child of any age can do most of it themselves.

Perfect for snacks or even as a ‘grab and go’ breakfast option for those who find eating in the morning more of a challenge.

Recipe – Cornflake bars

Option 1 – with nut butter
1 cup cornflakes
¼ cup nut butter (I used peanut)
1 tsp honey (this seemed really sweet to me but add or subtract to taste)

Method
Soften the nut butter and honey in the microwave or on the stovetop
Add mixture to cornflakes in a bowl and combine well
Push down in a greased pot with wet fingers (to prevent sticking)
Place in the fridge for 30 mins to harden
Cut into bar shapes

Option 2 – with dates
1 cup cornflakes
¼ cup of dates (approx. 6)
2 tsp butter (gives it a lovely buttery taste but optional)

Method
Soften the dates and melt the butter (I used the microwave)
Mash the dates into a paste
Combine with the cornflakes in a bowl
Press into a greased pot
Refrigerate for 30 mins to set
Cut into bars
