Ham, cheese & apple quesadilla
My son was off school sick and he’s my chief tester so it was a good time to do some experimenting with recipes that work for fussy eaters.
This ROCKS! He asked could he have it for lunch everyday and I have to admit I was scoffing down my half too.
He even recommended more apple for the next one. The apple gives a lovely textural crunch and natural sweetness.
I love this recipe as it’s super flexible and can be made to fit your child’s tastes. I have a host of ideas listed for you to weigh up.
Recipe – ham, cheese & apple quesadilla
Wraps – whatever works for you
Ham – optional – or could substitute bacon, salami, luncheon, Vegemite or even peanut butter
Cheese – optional – I used mozzarella but edam or brie would also work (yes, some fussy eaters like brie)
Apple, sliced thinly – optional – or could be subsituted with pear, sliced grapes, sliced pineapple
Method
Heat a greased frying pan on medium
Place the wrap down and add fillings to the top half (leave a gap so you can seal the wrap)
Fold over and press down around the edge to seal
Fry until browning each side
Cut into pieces and serve
Perfect cold for a snack or lunches too
