Meat-free ‘meatball’
Mince, like Vegemite is quite polarising. Some fussy eaters love it and others do not.
Unfortunately, mince makes up a lot of simple, budget-friendly family meals.
This week one of the recipes in our fussy-friendly Meals Mapped Out menu (link here to see what this is all about: https://theconfidenteater.com/meals-mapped-out-weekly-plans/ ) was pork meatballs. If you have a child who happily eats beef mince, that’s a simple swap. But what if they struggle with mince?
I wanted to find an alternative so the children can still be involved but eating similarly to the rest of the family.
Most of the meat-free meatballs recipes use chickpeas, beans or ‘fake’ meat substitutes. None of these are generally going to rock for a fussy eater.
Instead, I looked for foods that do rock for fussy eaters and had a play creating something that could pass for a pork meatball but that wasn’t mince-based.
Woo hoo, I think I have an alternative! I quite happily scoffed the testers too …
It would even work with a tomato-based sauce and can easily be GF.
Recipe – Meat-free ‘meatball’
(This quantity makes one large meatball)
1 tbs crushed Weetbix/Rice Bubbles or Cornflakes
1 hpd tbs grated cheese
1 tsp whisked egg
1 hpd tsp breadcrumbs (GF for GF 😊)
Method
Place all the ingredients into a bowl and squeeze into meatball shapes with the hands
Can serve as is, mix with pasta or add sauce
