Peach smoothie
I often make a filling smoothie for my youngest (who is no longer small). He has high calorie needs and a boost of dairy for calcium, quality yoghurt for gut health and fruit for extra vitamins is a good way to fill him up after a long evening at work on top of school and sports.
However, variety is the spice of life, and also a good way to provide a variety of nutrients so I am always looking for different flavours. Plus, berries that are a bit of a ‘go to’ are becoming helaciously expensive!!
Instead, I have created a tinned peach smoothie which ticks a lot of boxes. It’s reasonably priced, and less of a challenge texturally for fussy eaters who don’t like ‘bits’. It’s not totally smooth, but way less so than a berry version, for example.
I also have a couple of tricks that make it very ice cream-like, if you wish.
Recipe – peach smoothie
1 ripe banana – cut into pieces
1/8 cup cream (optional but a good calorie boost and the creaminess works instead of a sweetener)
½ cup yoghurt (plain or Greek – I use full fat)
1 tsp molasses (optional but gives it a deeper flavour – also a nutrient boost*)
½ tin of drained peaches
Method
Put all the ingredients in a blender and whiz until smooth
For a texture that is more like ice cream, freeze until semi-frozen (approx. 3 hours)
*Molasses (in it’s pure form, not the ‘coloured sugar version) contains bioavailable nutrients
