Pickled carrots
I know these don’t seem like an obvious choice for fussy eaters, but please bear with me!
We often feel that picky eaters prefer flavourless foods – hence the plain pasta, crackers, toast etc. However, although mixing foods may be a challenge, many children enjoy foods that are full of flavour.
Carrots are frequently eaten by fussy eaters, but often just raw.
Changing up foods that are currently eaten is always positive and this is one way to do it.
It can also be a great opportunity to have conversations about how it’s going to taste and whether the texture will be different etc.
Recipe – pickled carrots
1 medium carrot
1/6 cup vinegar
1/6 cup water
1 tbs sugar (I used coconut sugar)
Pinch salt
Method
Wash, peel and cut the carrot into batons
Combine everything else in a pan (or bowl)
Bring to boil and simmer to dissolve the sugar and salt (I used the microwave)
Place the carrots in a jar or pot
Cover with liquid
Seal the jar/pot
Keep in fridge for 24 hours
Lovely, crunchy, sweet, and acidic
