Pizza zucchini strips

Zucchini/courgette can be a bit of a tough sell for many children, particularly texturally. My boys can mostly take it or leave it, but this is one of the ways that they find it more pleasurable.

By cooking for longer, you can also change the texture so it’s less ‘wet’ and more crispy, which in general ticks boxes for fussy eaters.
Toppings can be added or left out. These have been done ‘pizza style’.

Recipe – Pizza zucchini strips

1 medium zucchini – slice into strips approx ½ cm thick (the thinner the crispier)
Tomato paste/sauce – optional
Oregano – optional
Grated cheese – I used mozzarella but edam/cheddar works too

Method

Heat oven to 180˚
Grease a baking dish or tray (use a metal tray for crispiness)
Placed sliced zucchini smallest side/skin side up
Roast in the oven until starting to brown on the underside (approx 10 mins)
Turn slices over and spread with tomato paste, sprinkle with oregano and add cheese
Return to the oven and cook until cheese melts
Serve warm
