Protein Boost Bark
This is admittedly a little left of centre but surprisingly good!
I am always looking for good ways to boost nutrients for children and although protein is rarely lacking in diets it’s great for helping children feel fuller for longer.
The bark takes minutes to prepare and is perfect for a snack, dessert or even breakfast. Mine looks lumpy as I used crunchy peanut butter (can be substituted).
Recipe – Protein boost bark
¼ cup of cottage cheese
1 hpd tsp honey or maple syrup
½ tbs of peanut butter (I used crunchy so the bark is a little lumpy). Use any nut or seed butter
Optional, spread with melted chocolate or sprinkle with choc chips
Method
Put the cottage cheese, honey and nut butter in a food processor and blend until smooth
Spread on a silicon sheet or piece of plastic (food storage lids work well)
Add chocolate, if you wish.
Freeze until set and crunchy
Peel from the sheet and eat
