Zucchini fritters

Zucchini/courgettes are in season so it seems a shame not to use them, however, I have made a more ‘fussy eater friendly’ version.

More like a pancake than a fritter and check out the colour!

Simple to make and a great way to add veggies into the diet.

Recipe – Zucchini fritters

1 densely packed cup of grated zucchini (I removed the skin to change the colour)
1 egg
¼ cup flour (I used wholemeal)
½ tsp baking powder
½ tsp garlic powder (optional)
½ tsp onion powder (optional)
Salt

Method

Place grated zucchini in a bowl and sprinkle over a little salt. Cover and leave 10 mins. Squeeze excess liquid from zucchini with hands or through a cheesecloth (I use a cheap teatowel).
Mix all the ingredients together. Leave for 10 mins.
Heat a non-stick oiled pan on med/high heat.
Form patties from zucchini mixture.
Fry patties until browning both sides (5 or so mins each side).
Serve warm.
