Cottage cheese buns

I had some leftover cottage cheese so wanted to use it up.

I found this recipe and was a bit skeptical if I’m honest.

OMG FLUFFY, they are so puffy and soft and amazing.

If you have a bread/carb loving fussy eater they are definitely worth a go. Any slight change to foods they normally eat is a win.

They are also slightly sweet which I wouldn’t normally enjoy but they do work, even with savoury dishes.

Great extra boost of protein and super quick and simple to make. In fact, perfect to make with children.

Recipe *

0.37 cup cottage cheese
1 egg
2/3 tsp vanilla
1/3 tsp baking powder
¼ tsp baking soda
1/3 tsp vinegar
2 tsp sugar (I used coconut sugar)
1 cup flour (I used wholemeal)

Method

Heat the oven to 175˚
Food process the cottage cheese, sugar, egg, and vanilla until smooth. Take out the blade (or scrape mixture into a bowl).
Mix baking soda and vinegar then add to the cheese mixture.
Add the baking powder and flour and mix everything together.
Form a dough.
Split into 6 equal pieces.
Flour hands if dough is sticky and form into rolls.
Place on a baking sheet (I used a silicon sheet)
Bake approx. 18-20 minutes until browning on the top.
Serve immediately.
Would work with sweet toppings like jam or honey or savoury with butter and cheese, for example.
