Apple scrolls

Apples are commonly eaten by fussy eaters so I’m always on the lookout for recipes that use them.

This rocks! In fact, my teen tried one, I blinked, and he’d scoffed the lot “sorry mum, I was hungry …”.

I made my own pastry (super simple) which is why it looks pretty rustic, but you could also use pre-made. The recipe is flexible too as it would work with other fruits.

Recipe – Apple scrolls

1 cup flour
1/3 cup chopped butter
Pinch salt
¼ + 1/8 cup milk
1 apple (peeled and sliced) may not need all
1/8 – ¼ cup sugar (to taste)
Cinnamon (optional)

Method

Heat oven to 180˚
Put flour, butter, salt, and a tsp of sugar into a food processor. Process until a crumb forms.
Put crumb mixture in a bowl and add milk. Combine to form a dough.
Place in the fridge to chill.
Peel, core and slice an apple.
Roll out the pastry (chilled is better, but I was impatient!). If it’s thinner it will cook more evenly.
Roll into a rectangle.
Add slices of apples in rows – which I should have taken a photo of, but didn’t, so here is a fabulous drawing 😉

Sprinkle with sugar.
Roll the pastry from the top down over the apples and sugar to create a tube shape.
Cut the tube into slices (approx. 35cm wide) and place cut ends up in a greased baking dish.

Sprinkle with cinnamon if you wish.
Bake for approx. 25 mins until the pastry is browning (may take more or less time dependent on thickness of the pastry).
Eat warm or cold.
