Brownies – the best recipe I have found!!

I must have tried about 20 recipes before I hit upon this one. All the others were dry, needed kilos of sugar or just didn’t rock.

These ones, however, are great.

Added bonus is they contain black beans. Beans are one of our 5-A-Day and a great source of protein, fibre and nutrients.

I would never recommend ‘hiding’ things for a fussy eater, but if incorporating it into a food makes it easier for them to eat then I’m all for that!

Recipe

1 can black beans
2 tbs cocoa powder
8 dates (chopped)
1/3 cup yoghurt
½ cup oats (quick cook or rolled would work. I used wholegrain and broke them up in my spice grinder)
¼ cup melted butter
1 dessert sp honey (add more to taste)

1 tsp vanilla
1 tsp baking powder
Pinch salt

Method

Heat oven to 180˚
Melt butter with dates (I used the microwave)
Place drained beans, cocoa powder, dates, yoghurt, melted butter, honey and vanilla in the food processor or blender and mix to a paste.
Transfer to a bowl.
Add oats, baking powder and salt and incorporate into the paste.
Place in a greased baking dish.
Bake approx 15 mins. The brownie will continue cooking after it’s taken from the oven so if you like it a little gooey and sticky on the inside pull out when it’s still a little underdone.
Leave to cool.
Cut into squares.
Will keep fairly well in an airtight container.
