A lot of fussy eaters are not mash potato eaters.
I was looking for a recipe that would use up left over mash and possibly tick boxes for picky eaters.
These were simple, delicious and weirdly did not really taste of mash!
I think they could be worth a whirl if you have a child that loves cheesy flavours and is okay with softer textures.
1/6 cup of sour cream
1 ½ cups of mash
½ hpd cup of grated cheese (I used tasty)
1 tbs Parmesan
Salt & pepper
Heat the oven to 205˚
Whisk the egg and sour cream together in a bowl.
Add cheese and mash and mix well
Spoon into greased muffin tin (makes approx 6)
Bake in the oven for 20-25 mins until browning and crispy on top
