Bean cookie

We had some beans left over so I thought I’d experiment.

Honestly, these are probably more a delivery system for choc chips
But never-the-less they rock!

Soft, chocolaty & not at all ‘beany’

Recipe – Bean cookie*

½ can white beans drained (I used cannellini)
1/8 cup honey/maple syrup
¼ cup nut butter (I used peanut)
½ tsp vanilla extract
1/4 Tbs lemon juice
½ tsp baking powder
Pinch salt
1/3 + cup choc chips (I blitzed dark block chocolate in the food processor)

Method

Heat oven to 170°

Blend all ingredients except choc chips together until smooth

Add choc chips and mix well

Spoon cookie-sized dollops onto silicon or baking paper

Bake for approx. 12-15 mins until browning

Allow to cool
