Pineapple cookies
Easy to make, and a lot unusual.
But my teen LOVES tinned pineapple, so when I saw this recipe I had to try it.
They are a bit awkward to eat, but a great novelty!
If I made them again I’d do smaller cookies and use a quarter of a ring
Recipe – Pineapple cookies *
½ cup softened butter
1/8 – 1/4 cup sugar (I used 1/8, add more to taste)
½ egg
½ tsp vanilla
1 cup flour (I used wholemeal)
½ tsp baking soda
¼ tsp salt
5 rings of pineapple (patted dry)
Sugar to sprinkle
Method
Heat oven to 180°
Cream butter and sugar
Add egg and vanilla and beat
Stir in dry ingredients
Using baking paper or a silicon tray, spoon 2 Tbs of dough (or enough to squish down and have space for a pineapple ring – or cut the ring into 4 and adjust cookie size accordingly)
Sprinkle sugar on the pineapple
Flip the cookie over and bake appox 12 minutes until cookie is browning ansd set in the middle
Allow to cool slightly before moving
