Pizza tart
Simple, delicious and a crowd pleaser
Perfect for a snack or the lunchbox
I made my own pastry, but you can easily use store-bought
Fill with whatever rocks for your child
Mine was delighted with these as a lunch option!
Recipe – Pizza tart
Pastry (or use store-bought)
½ cup flour (I used wholemeal)
31.25gm butter (chopped or grated)
Pinch of salt
Water
Filling (choose whatever you have & rocks for your child)
Tomato paste (optional)
Oregano (optional)
Mozzarella (melts well but could use cheddar/Edam)
Salami (and/or chicken, sausage, bacon, pineapple)
Method
Pastry
Preheat oven to 180°
Rub together flour, butter and salt (I used the food processor)
Add enough cold water to form a non-sticky dough
Allow to rest (I didn’t and it was fine!)
Separate into 6 balls
Roll into circles
Place into a muffin tin
Par bake until slightly browning (approx. 12 mins)
Filling
Add filling
I spread tomato paste, added a sprinkle of oregano
Some grated mozzarella, slices of salami, more cheese
Return to the oven and cook until cheese melts and pastry crispy
Approx 10 mins
Serve hot or cold
