Sweet potato pie

This is delicious and contains not one but 2 veg!

It’s also high protein

Simple to make and with standard pantry items it’s a winner

Feels like you are just having a piece of pie!

Recipe – Sweet potato pie*

1/3 cup sweet potato/kumara mashed (I grated and microwaved)
¼ cup nut butter (I used peanut)
1 tin white beans (I used cannellini)
1/3 cup honey
¼ cup flour (I used wholemeal)
¾ tsp baking powder
¼ tsp cinnamon
1/8 tsp baking soda
2 tsp vanilla
½ cup choc chips (I used 70% block choc whizzed in the food processor)

Method

Heat oven to 175°
Place everything except the choc chips in the food processor and blend until smooth
Stir in choc chips
Scrape into a greased baking dish
Smooth down
Bake approx. 28 mins until browning on top
Allow to cool before slicing
Perfect as a snack or dessert
