
Duck pancakes (with no duck)
These are apparently called duck pancakes. Mine look very dark as I only had whole meal bread flour to hand.
Very simple to make, but do require a bit of kneading!
Inside I have added some pork and thin slices of cucumber. This could be exchanged for chicken or cheese, for example.
Should you wish, you could also return to the frying pan to melt the cheese.
Recipe
To make 5
– 75g of flour
– 62.5ml of boiling water
– Pinch salt
Add the water to the dry ingredients and stir until cool enough to knead
Knead for 5 mins
Split into 5 balls of dough
Roll out as thinly as possible
Lightly brush oil into a pan
Fry on medium heat until cooked but not brown (approximately a minute each side)
Stuff and fold.
