Chocolate brownie – with veggies!
Although not a fan of hiding, I do love recipes that incorporate nutrient-dense foods or those that may be a little more challenging to eat for fussy eaters.
These brownies have either black beans or cannellini beans as a base. Beans are budget friendly, easy to find and one of our 5 a day!
My boys both thought these were great both in terms of taste and texture (and they are not shy in their critiques!!).
Recipe
1 can black beans or cannellini beans (drained)
1/3 cup cocoa
3 Tbs butter
1/3 cup honey
½ tsp baking powder
½ tsp baking soda
1 tsp vanilla
Salt
Put all the ingredients in a food processor and whiz until smooth.
Pour into a greased pan
Bake at 175˚ approx. 25 mins (I like mine to be slightly gooey when removed from the oven)
Leave to cool in pan
