There are parents of the plain pasta crew hiding in every town wishing for any other colour to hit the beige! Making the move to sauces can be a big one but, it can be done.
I have some user-friendly options here. Don’t be scared of the green, a surprising number of selective eaters come to love pesto. Don’t think because your child likes plain pasta, crackers and toast, it automatically follows that they aren’t interested in bold flavours either.
If green is too big a move, at the moment, look at the other options:
1. We have cheese sauce. It’s one of my favourite things to start with for selective eaters who like cheese. Again, on the side to dip into is usually easier than putting it on top.
2. Tomato sauce. This is very ketchup-like so a mini step. Tomato paste, water, a little sweetener, and a sprinkle of salt.
3. Pesto. This is my budget version! ¼ cup cashews (or other nuts), ¼ cup grated parmesan, ¼ cup extra virgin olive oil, clove of garlic chopped, 2 tsp lemon juice, sprinkle of salt, 2 tightly packed cups of greens (I generally mix basil and spinach). Put in the food processor and blitz.
