Apple French toast
The photo does not make it look particularly appetising as I decided to cut the bread into cubes instead of leaving whole. If I did it again I would cut in half or quarters instead!
This is a bit of a riff on French toast, using apple puree alongside the other ingredients.
I have also swapped in yoghurt for milk.
It came out like a cross between an apple fritter and French toast. Crispy on the outside and soft in the middle.
The apple could be swapped for mashed banana too.
Recipe Apple French toast
2 slices of bread
1 beaten egg
2 tbs yoghurt (I used Greek)
½ tsp vanilla
1 apple pureed (1/2 cup) (or same quantity of mashed banana)
1 tsp honey
¼ tsp cinnamon (optional)
Method
Heat pan to med-high heat.
Whisk together egg, yoghurt, vanilla, apple puree and honey.
Soak bread in the mixture for a minute either side.
Sprinkle with cinnamon.
Add butter to the pan and fry bread until browning on both sides.
Serve warm with optional extra honey, choc chips, ice cream or jam.
