High protein eggs

There are quite a few fussy eaters who enjoy scrambled eggs, and this is a new take that could be a win.

If you haven’t tried scrambled with your child yet, it’s always worth a whirl. I would though, ensure that the quantity is tiny to start with.

Adding extra protein to eggs helps children stay fuller for longer. It can also boost the flavour.

Recipe – high protein scrambled eggs

1 medium egg
¼ cup of cottage cheese (if you would like to reduce the chunky texture you can blend prior to adding)
S & P (optional)

Method

Heat to medium a frying pan
Add butter or oil
Whisk eggs and cottage cheese together
Pour into pan
Gently fold over the mixture until cooked though
Serve warm
