
Strawberry squares

I wanted to add some toppings for flavour and a nutrient boost.
Can you guess what’s under the strawberries?
It’s a great alternative to supermarket crackers and lends itself to fruit toppings.
Recipe – Strawberry squares
Pastry squares (see link above for recipe)
Cottage cheese (it’s a great protein boost. I blend mine in the food processor to make into a smooth spread – which is optional. You could also add a little honey for sweetness)
Fruit – I used strawberry slices but pick your favourite
Method
Bake pastry squares and allow to cool
Spread with cottage cheese or other spread
Top with fruit of choice
Perfect for snacks or lunchboxes
