Dairy-free mousse

I had some leftover coconut cream after making a curry so thought I would put it to good use.

This simple snack or dessert needs only 3 ingredients, is dairy-free and full of flavour.

Perfect for children to make themselves.

Recipe – Dairy-free mousse

½ can of coconut cream
1 tbs cocoa powder
1 dessert sp sugar (adjust to taste)

Method

Blend all the ingredients together (I used a mini food processor)
Serve as is or semi-freeze for a more ice-creamy texture
Would be perfect in the lunchbox
