Orange cookies
I tested Annabel Langbein’s orange cake, and it was amazing. So I wondered could I use the same concept in cookies?
The answer is a resounding yes. Just like the cake, these are delicious.
They have the amazing zing from the orange but texturally they are like a regular cookie.
For non-fruit eating children, I reckon they will appeal even though there is a whole orange baked in.
You could easily add some cinnamon/nutmeg and make a little ‘Christmassy’ or go choc/orange – particularly for those who are not used to the orange flavour.
Recipe – Orange cookies
62.5 g butter (softened)
40 g sugar – I used raw (add more to taste)
1 small egg
1 small orange skin included, chopped (or use ¾ large orange)
1 ½ cups flour – I used wholemeal
½ tsp baking powder
1/3 cup raisins (optional – and can substitute for other dried fruit)
Method
Heat oven to 180°
Beat together butter and sugar in food processor
Add egg and chopped whole orange to mixture and blitz until it’s all well mixed
Stir in flour, baking powder and dried fruit
The dough will be fairly sticky so it’s far easier to handle if chilled first
Roll out between baking paper or silicon sheets
The thinner the crispier. Mine were about ½ cm thick
Place on a baking tray and cook for approx. 20 mins until browning (check at 15 mins)
Cool on a wire rack
Delicious as is or can add your favourite sweet spread or even cheese!
