Protein boost porridge
When we have a fussy eater it’s important to maximise any opportunity to boost nutrients.
If you have a child that eats porridge, this ingredient is an awesome way to increase the protein and vitamins. It also makes it far more creamy (and no it’s not cream 😉).
I have tested a version with a banana and without, and both work really well.
What’s the mystery ingredient? You may not guess…
Recipe
½ cup oats (either quick cook or oat flour. I put wholegrain oats in my spice grinder to make flour)
¾ – 1 cup milk (regular or plant-based)
½ banana (if you have a banana eater, or can swap for ½ – 1 tsp honey, to taste). Frozen bananas work.
½ egg
In a saucepan cook oats, milk and banana (if using banana) on a medium low heat, stirring, until mixture thickens.
Make sure the heat is low, add egg and honey (if using honey) stir until well mixed.
Serve.
