Apple cobbler

My mum used to make this when I was little

It’s the first one I’ve made & it was not a disappointment

In fact, my eldest, who is rarely complimentary about my baking
Came over & scoffed 2 helpings (much to my teen’s dismay)

Simple, delicious & a great way to increase fruit consumption.

Recipe – Apple Cobbler

Filling
¼ Tbs butter
2 cups apple (peel and slice thinly)
½ Tbs sugar (I used coconut) – add more to taste
¼ Tbs lemon juice
¼ Tbs flour (I used wholemeal)
1/3 tsp cinnamon
Pinch All spice/nutmeg

Topping
1 ½ Tbs melted butter
1/8 cup sugar
¼ cup milk
¼ tsp vanilla
½ cup flour
¼ tsp baking powder
Pinch salt

Method

Heat oven to 177°
Filling
Precook apples in melted butter in frying pan over medium heat.
Add sugar, lemon juice, flour & spices.
Cook, stirring occasionally for approx 5 mins until apple is coated & starts to soften
Placed in greased baking dish (I laid a few layers of apple)

Topping
Whisk butter & sugar together. Add milk, vanilla, flour, baking powder & salt
Spread batter over the apples
I sprinkled a little sugar over the batter for extra sweetness
Bake for approx 50-55 mins until the top is browning
Serve hot or cold
