Peanut butter balls

These are one of my favourite high energy snacks. In fact, I was excited to have some to tide me over after a run this morning!

If your child likes peanut butter, they are an easy snack and can be adapted to suit taste.

I use a no sugar peanut butter so add chopped dates to give sweetness. Alternatively, some honey, jam or maple syrup could be mixed in.

I have added chopped nuts and seeds (great for trace nutrients). Other options maybe raisins or choc chips.

Softening the peanut butter slightly in the microwave first makes the ‘dough’ easier to roll.

If you like, they can be rolled in sprinkles, choc chips or other coating.

Place in the fridge to firm up.
