Baked apple fritters

These were fantastic and so easy to make
It’s a great way to load up on fruit!

Recipe – Baked apple fritters

1 cup flour (I used wholemeal)
3 tsp sugar (I used coconut)
½ Tbs baking powder
½ tsp cinnamon
1/8 tsp nutmeg
¼ tsp salt
¼ cup milk
1 lrg egg
1 Tbs melted butter
½ tsp vanilla
1 lrg apple peeled, cored and diced

Method

Heat oven to 200°
Place diced apple into a bowl and coat with cinnamon
Mix dry ingredients in a second bowl
Whisk together wet ingredients
Combine wet, dry and apple (don’t overmix)
Spoon mixture into rough circles on a silicon tray or baking paper
Cook for approx 15 mins until browning on top
Cool on a wire rack
Eat as is or add icing, should you wish
