Berry bagels

I made this with cranberries – which I wouldn’t advise as they were quite bitter 😊

However, the concept is excellent!

The bagels themselves were delicious and with either a sweeter berry or even raisins or dates they would be amazing.

Quick and simple, virtually no kneading and take 25 mins from start to finish.

Perfect for breakfast, lunches or snacks.

Recipe – Berry bagels

2 cups of flour (I used wholemeal)
4 tsp baking powder (or use self-raising flour)
1 cup plain yoghurt (I used full fat Greek)
1 cup berries or dried fruit
Salt
1 egg beaten (optional)

Method

Heat oven to 190˚
In a bowl mix flour, baking powder, salt and yoghurt.
Knead for 3 minutes.
Add the fruit and mix in.
Split the dough into 6 pieces and roll each into a log shape.
Form each log into a circle by joining the ends of the log.
Place on a silicon or greased baking sheet. Brush with egg.
Bake in the oven for 18-20 minutes until browning.
Allow to cool.
Eat as is with butter or favourite spread, or toast first.
