Blueberry scrolls

YUM!
Great for the lunchbox or for dessert.
I used blueberries as they are in season, but you can swap in other fruits.
Simple to make.
New foods are always a win for selective eaters.

Recipe – Blueberry scrolls

Scroll
1 cup flour
1 ½ tsp baking powder
¼ tsp salt
Sugar (if you prefer sweet dough – 1 dst spoon)
45gm butter
1/3 cup milk
Filling
25gm butter
Cinnamon to taste (I used a tsp)
1 tsp sugar (add more to taste)
¾ cup blueberries (or other fruit)

Method

Heat oven to 210°
Rub flour, baking powder, salt and butter together to make a crumb (I whizzed in my food processor)
Add the milk and stir to form a dough
Place in the fridge for 20 mins
Roll out into a rectangle (0.5 – 1cm thick)
Spread with butter
Sprinkle on the sugar and cinnamon
Add the blueberries (I was lazy and placed them all in one spot!)
Roll into a long tube
Cut into slices approx. 2 cms think
Bake in a greased baking dish approx. 20 mins until golden brown
Serve as is or with cream or custard
