
Breakfast slice
This is a super simple recipe you can use at breakfast, as a snack or even dessert.
It has extra fibre and omega 3’s added too so is a great nutrient boost.
Flexible, you can cater to your child’s tastes.
Recipe – Breakfast slice
½ cup flour (I used wholemeal)
1 tsp baking powder
½ cup dried fruit (or nuts or choc chips)
1 cup Cornflakes (Weetbix would also work)
¼ cup sugar (I found this super sweet so add reduce to taste)
1/8 cup ground linseeds/flaxseeds (or LSA) for Omega 3’s
1/8 cup oat bran (for fibre)
1 egg – beaten
71gm melted butter
1 dst sp honey (or maple syrup)
Method
Heat oven to 175°
Mix all the dry ingredients in a bowl
Add the egg, butter and honey
Mix well
Press into a greased baking dish
Bake for approx. 20 mins
Leave to cool completely before slicing
