Cereal crusted toast sticks
I discovered this awesome recipe for French toast that was baked in the oven instead of fried in the pan.
The recipe ticks boxes for many fussy eaters:
– It’s crunchy
– It’s dry
– It’s got extra protein
– It can be adapted to suit
I took the original recipe and added cornflakes to the outside, but many favourite cereals would work.
It’s quick and simple to make and honestly it’s really, really good!
Recipe – Cereal crusted toast sticks
2 slices of bread
1 egg
1/3 cup of milk – I did part milk and part cream (for calorie boost)
¼ tsp cinnamon (optional)
½ tsp vanilla (optional)
Sugar to sprinkle on top/or honey to drizzle (optional)
Crushed cornflakes or other cereal
1 dst sp butter or oil to cook toast
Method
– Heat oven to 220°
– Cut the bread into slices (the thinner the crispier) and place in a shallow dish
– Mix together all the wet ingredients. The egg must be totally mixed, or you may get ‘scramble’ bits. I used a stick blender.
– Add cinnamon to the wet mixture, if using.
– Pour the wet ingredients over the bread. Allow to soak for 2 mins, flipping the bread half way through.
-Sprinkle with sugar/drizzle with honey (if using)
-Add the crushed cornflakes or other cereal
– Place a baking tray in the oven and melt butter (or use oil)
– Place the bread strips on the melted butter/oil on the tray.
– Bake in the oven approx 10 minutes until crispy and browning. For very thin slices check after 5 mins.
– Eat as is or drizzle with honey or maple syrup, for example, or dip in jam/Vegemite/softened peanut butter
